This recipe gives you golden, crispy polenta topped with flavorful sun-dried tomatoes and a sprinkle of fresh basil, perfect for an appetizer or a snack to share with friends.
- 2 cups vegetable broth
- 1 cup polenta (cornmeal)
- 1/4 cup nutritional yeast
- 1 teaspoon garlic powder
- 1 tablespoon olive oil, plus more for frying
- Salt and black pepper to taste
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 1/4 cup fresh basil leaves, thinly sliced
Instructions:
- In a saucepan, bring the vegetable broth to a boil. Slowly whisk in the polenta, nutritional yeast, and garlic powder. Reduce heat to low and cook, stirring constantly, until the mixture thickens and the polenta is tender, about 15-20 minutes.
- Season with salt and black pepper, then stir in 1 tablespoon of olive oil.
- Spread the polenta evenly in a greased baking dish and let it cool until set, about 30 minutes.
- Once set, cut the polenta into squares.
- Heat a little olive oil in a pan over medium-high heat and fry the polenta squares until they are golden and crispy on the outside.
