Vegan Sweet Potato Tacos

Ingredients:

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 cup cooked black beans
  • 1 ripe avocado, sliced
  • 1/2 cup fresh salsa
  • 8 small tortillas
  • Fresh cilantro, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, paprika, cumin, garlic powder, chili powder, and salt. Spread them out on a baking sheet lined with parchment paper.
  3. Bake for 25-30 minutes, or until the sweet potatoes are tender and slightly crispy.
  4. In the meantime, warm the tortillas in a skillet or microwave.
  5. Fill each tortilla with a scoop of roasted sweet potatoes, black beans, avocado slices, fresh salsa, and a sprinkle of fresh cilantro.
