Vegan Sweet Potato Tacos
Ingredients:
- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1 cup cooked black beans
- 1 ripe avocado, sliced
- 1/2 cup fresh salsa
- 8 small tortillas
- Fresh cilantro, for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with olive oil, paprika, cumin, garlic powder, chili powder, and salt. Spread them out on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, or until the sweet potatoes are tender and slightly crispy.
- In the meantime, warm the tortillas in a skillet or microwave.
- Fill each tortilla with a scoop of roasted sweet potatoes, black beans, avocado slices, fresh salsa, and a sprinkle of fresh cilantro.
- Serve the vegan sweet potato tacos warm and enjoy!
Note: Feel free to add your favorite toppings like vegan sour cream, jalapeños, or lime juice for an extra kick!
