Vegan Sweet and Sour Tofu
Get ready for a flavor explosion with this tangy and sweet dish! 🍍🌢️

Ingredients:

  • 1 block of firm tofu, cut into bite-sized cubes
  • 1 cup pineapple chunks
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons tomato ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon ginger, grated
  • 1 teaspoon sriracha sauce (optional)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. In a large bowl, whisk together cornstarch, soy sauce, rice vinegar, tomato ketchup, brown sugar, ginger, and sriracha sauce.
  3. Add the tofu cubes to the bowl and toss until they are coated in the sauce. Let them marinate for at least 15 minutes.
  4. Heat vegetable oil in a large skillet over medium heat. Add the marinated tofu cubes and cook until they are crispy and golden brown on all sides. Remove from the skillet and set aside.
  5. In the same skillet, add the sliced bell peppers, onion, and minced garlic. Cook until the vegetables are tender.
  6. Add the pineapple chunks and the remaining marinade to the skillet. Cook for an additional 2-3 minutes, until the sauce thickens.
  7. Return the tofu cubes to the skillet and toss everything together until well combined and heated through. Season with salt and pepper to taste.
  8. Serve the sweet and sour tofu over steamed rice or noodles. Enjoy!
