Vegan Sweet and Sour Tofu
Ingredients:
- 1 block of firm tofu, cut into bite-sized cubes
- 1 cup pineapple chunks
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 tablespoon cornstarch
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons tomato ketchup
- 2 tablespoons brown sugar
- 1 teaspoon ginger, grated
- 1 teaspoon sriracha sauce (optional)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions:
- Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
- In a large bowl, whisk together cornstarch, soy sauce, rice vinegar, tomato ketchup, brown sugar, ginger, and sriracha sauce.
- Add the tofu cubes to the bowl and toss until they are coated in the sauce. Let them marinate for at least 15 minutes.
- Heat vegetable oil in a large skillet over medium heat. Add the marinated tofu cubes and cook until they are crispy and golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, and minced garlic. Cook until the vegetables are tender.
- Add the pineapple chunks and the remaining marinade to the skillet. Cook for an additional 2-3 minutes, until the sauce thickens.
- Return the tofu cubes to the skillet and toss everything together until well combined and heated through. Season with salt and pepper to taste.
- Serve the sweet and sour tofu over steamed rice or noodles. Enjoy!
