Vegan Sushi Rolls

Ingredients:

  • 2 cups sushi rice
  • 4 nori sheets
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • Soy sauce, for serving
  • Wasabi, for serving

Instructions:

  1. Cook the sushi rice according to the package instructions. Let it cool completely.
  2. Place a sheet of nori on a bamboo sushi mat.
  3. Wet your hands and grab a handful of sushi rice. Spread it evenly over the nori, leaving about an inch of space at the top.
  4. Place a few slices of avocado, cucumber, and carrot on top of the rice.
  5. Using the bamboo mat, roll the sushi tightly from the bottom, applying gentle pressure. Wetting the top inch of the nori will help seal the roll.
  6. Repeat the process with the remaining ingredients.
  7. Once all the rolls are made, use a sharp knife to slice them into bite-sized pieces.
  8. Serve the vegan sushi rolls with soy sauce and wasabi.
