Vegan Sushi Rolls
Ingredients:
- 2 cups sushi rice
- 4 nori sheets
- 1 avocado, sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- Soy sauce, for serving
- Wasabi, for serving
Instructions:
- Cook the sushi rice according to the package instructions. Let it cool completely.
- Place a sheet of nori on a bamboo sushi mat.
- Wet your hands and grab a handful of sushi rice. Spread it evenly over the nori, leaving about an inch of space at the top.
- Place a few slices of avocado, cucumber, and carrot on top of the rice.
- Using the bamboo mat, roll the sushi tightly from the bottom, applying gentle pressure. Wetting the top inch of the nori will help seal the roll.
- Repeat the process with the remaining ingredients.
- Once all the rolls are made, use a sharp knife to slice them into bite-sized pieces.
- Serve the vegan sushi rolls with soy sauce and wasabi.
