Vegan Spaghetti Bolognese
Ingredients:
- 1 box vegan spaghetti
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- plant-based mince
- crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
- Vegan parmesan, for serving
Instructions:
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. SautΓ© until the vegetables are soft and fragrant.
- Add the plant-based mince to the saucepan and cook for about 5 minutes, until browned.
- Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Simmer for 15-20 minutes, allowing the flavors to meld together.
- Divide the cooked spaghetti among serving plates and top with the vegan bolognese sauce.
- Garnish with fresh basil leaves and serve with vegan parmesan on the side.
