Vegan Spaghetti Bolognese
A plant-based twist on the classic Italian dish 🌱🍝

Ingredients:

  • 1 box vegan spaghetti
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • plant-based mince
  • crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Vegan parmesan, for serving

Instructions:

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. SautΓ© until the vegetables are soft and fragrant.
  3. Add the plant-based mince to the saucepan and cook for about 5 minutes, until browned.
  4. Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Simmer for 15-20 minutes, allowing the flavors to meld together.
  5. Divide the cooked spaghetti among serving plates and top with the vegan bolognese sauce.
  6. Garnish with fresh basil leaves and serve with vegan parmesan on the side.
