Vegan Rainbow Salad
Ingredients:
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, thinly sliced
- 1 carrot, shredded
- 1 avocado, diced
- For the lemon vinaigrette:
Instructions:
- In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, carrot, and avocado.
- In a small bowl, whisk together the lemon juice, olive oil, maple syrup, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately.
