Vegan Palak Paneer

Vegan Palak Paneer
Satisfy your cravings with this creamy and nutritious spinach-based curry! 🌱🍛

Ingredients:

  • 2 cups spinach leaves, washed and chopped
  • 200g firm tofu, cubed
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 cup coconut milk
  • 2 tablespoons vegetable oil
  • Salt, to taste

Instructions:

  1. Heat vegetable oil in a pan and add chopped onions. Sauté until translucent.
  2. Add ginger, garlic, and green chili. Sauté for another minute.
  3. Add tomato puree and cook until the oil separates from the masala.
  4. Add garam masala, turmeric powder, cumin powder, and coriander powder. Mix well and cook for 2 minutes.
  5. Add chopped spinach and sauté until wilted.
  6. Add coconut milk and salt. Cook for another 2-3 minutes.
  7. Add cubed tofu and gently mix everything together. Cook for an additional 2-3 minutes.
  8. Serve hot with steamed rice or naan bread.
