Vegan Palak Paneer
Ingredients:
- 2 cups spinach leaves, washed and chopped
- 200g firm tofu, cubed
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 green chili, chopped
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 cup coconut milk
- 2 tablespoons vegetable oil
- Salt, to taste
Instructions:
- Heat vegetable oil in a pan and add chopped onions. Sauté until translucent.
- Add ginger, garlic, and green chili. Sauté for another minute.
- Add tomato puree and cook until the oil separates from the masala.
- Add garam masala, turmeric powder, cumin powder, and coriander powder. Mix well and cook for 2 minutes.
- Add chopped spinach and sauté until wilted.
- Add coconut milk and salt. Cook for another 2-3 minutes.
- Add cubed tofu and gently mix everything together. Cook for an additional 2-3 minutes.
- Serve hot with steamed rice or naan bread.
