Vegan Pad Thai
Ingredients:
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 1 cup diced tofu
- 1 cup bean sprouts
- 1/4 cup chopped peanuts
- 4 green onions, chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tbsp tamarind paste
Instructions:
- Soak the rice noodles in warm water for 15 minutes until they soften. Drain and set aside.
- In a wok or large frying pan, heat the vegetable oil over medium-high heat. Add the tofu and cook until golden brown, about 5 minutes. Remove from the pan and set aside.
- Add the garlic to the pan and cook for 1 minute. Add the rice noodles and stir-fry for 2-3 minutes.
- In a small bowl, whisk together the lime juice, soy sauce, brown sugar, and tamarind paste. Pour the sauce over the noodles and stir-fry for an additional 2 minutes.
- Add the cooked tofu, bean sprouts, green onions, and chopped peanuts to the pan. Toss everything together and cook for another minute.
- Remove from heat and garnish with fresh cilantro. Serve hot and enjoy!
