Vegan Pad Thai

Ingredients:

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 1 cup diced tofu
  • 1 cup bean sprouts
  • 1/4 cup chopped peanuts
  • 4 green onions, chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp tamarind paste

Instructions:

  1. Soak the rice noodles in warm water for 15 minutes until they soften. Drain and set aside.
  2. In a wok or large frying pan, heat the vegetable oil over medium-high heat. Add the tofu and cook until golden brown, about 5 minutes. Remove from the pan and set aside.
  3. Add the garlic to the pan and cook for 1 minute. Add the rice noodles and stir-fry for 2-3 minutes.
  4. In a small bowl, whisk together the lime juice, soy sauce, brown sugar, and tamarind paste. Pour the sauce over the noodles and stir-fry for an additional 2 minutes.
  5. Add the cooked tofu, bean sprouts, green onions, and chopped peanuts to the pan. Toss everything together and cook for another minute.
  6. Remove from heat and garnish with fresh cilantro. Serve hot and enjoy!
