Vegan Orange Tofu

Vegan Orange Tofu
Tangy and flavorful, this vegan orange tofu is a citrusy delight! 🍊🌱

Ingredients:

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves of garlic, minced
  • 1 cup orange juice
  • 1 tablespoon soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon orange zest
  • Salt and pepper, to taste
  • Sliced green onions and sesame seeds, for garnish

Instructions:

  1. In a large bowl, toss the tofu cubes with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the tofu cubes and cook until crispy and golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and minced garlic. SautΓ© for 2-3 minutes until the peppers are slightly softened.
  4. In a small bowl, whisk together the orange juice, soy sauce, maple syrup, rice vinegar, and orange zest. Pour the sauce into the skillet with the bell peppers and garlic. Stir well to combine.
  5. Return the crispy tofu cubes to the skillet and toss to coat them in the sauce. Cook for an additional 2-3 minutes, until the sauce has thickened slightly.
  6. Season with salt and pepper to taste.
  7. Serve the vegan orange tofu over steamed rice, garnished with sliced green onions and sesame seeds.
