Vegan Miso Soup
Warm your soul with a bowl of vegan miso soup 🍲

Ingredients:

  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 1 cup sliced mushrooms
  • 1 cup diced carrots
  • 1/2 cup diced tofu
  • 2 green onions, sliced
  • 1 sheet nori seaweed, torn into small pieces

Instructions:

  1. In a large pot, bring the vegetable broth to a boil.
  2. In a small bowl, dissolve the miso paste in a little bit of hot water to make it easier to mix.
  3. Add the miso paste, mushrooms, carrots, and tofu to the pot. Reduce the heat and simmer for about 10-15 minutes, or until the vegetables are tender.
  4. Garnish with sliced green onions and torn nori seaweed before serving.
