Vegan Miso Soup
Ingredients:
- 4 cups vegetable broth
- 3 tablespoons miso paste
- 1 cup sliced mushrooms
- 1 cup diced carrots
- 1/2 cup diced tofu
- 2 green onions, sliced
- 1 sheet nori seaweed, torn into small pieces
Instructions:
- In a large pot, bring the vegetable broth to a boil.
- In a small bowl, dissolve the miso paste in a little bit of hot water to make it easier to mix.
- Add the miso paste, mushrooms, carrots, and tofu to the pot. Reduce the heat and simmer for about 10-15 minutes, or until the vegetables are tender.
- Garnish with sliced green onions and torn nori seaweed before serving.
