Vegan Matcha Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon matcha powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1 cup almond milk
- 1 tablespoon apple cider vinegar
- 1 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
- Optional toppings: fresh berries, maple syrup, vegan butter
Instructions:
- In a large bowl, whisk together the flour, matcha powder, sugar, and baking powder.
- In a separate bowl, mix the almond milk, apple cider vinegar, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Preheat a non-stick skillet or griddle over medium heat.
- Scoop 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.
- Repeat with the remaining batter.
- Serve the pancakes warm with fresh berries, maple syrup, and vegan butter if desired.
