Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon matcha powder
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Optional toppings: fresh berries, maple syrup, vegan butter

Instructions:

  1. In a large bowl, whisk together the flour, matcha powder, sugar, and baking powder.
  2. In a separate bowl, mix the almond milk, apple cider vinegar, melted coconut oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Preheat a non-stick skillet or griddle over medium heat.
  5. Scoop 1/4 cup of batter onto the skillet for each pancake.
