Vegan Chocolate Chip Pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup plant-based milk (such as almond or soy milk)
- 2 tablespoons vegetable oil
- 1/2 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the plant-based milk, vegetable oil, and vanilla extract to the bowl, and stir until just combined. Be careful not to overmix - a few lumps are okay.
- Gently fold in the vegan chocolate chips.
- Heat a non-stick griddle or pan over medium heat. Pour 1/4 cup of pancake batter onto the griddle for each pancake.
- Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown.
- Serve the pancakes warm with your favorite vegan butter, maple syrup, and additional chocolate chips for extra indulgence.
