Vegan Chocolate Chip Cookies
Ingredients:
- 1 cup plant-based butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups vegan chocolate chips
Instructions:
- Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened plant-based butter, brown sugar, and granulated sugar until light and fluffy.
- Add the vanilla extract and mix well.
- In a separate bowl, combine the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Stir in the vegan chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
