Vegan Caprese Salad
A vegan twist on a classic Italian salad πŸ…βœ¨

Ingredients:

  • 4 ripe tomatoes
  • 1 block of vegan mozzarella cheese
  • A handful of fresh basil leaves
  • 2 tablespoons of balsamic glaze
  • Extra virgin olive oil for drizzling
  • Salt and pepper to taste

Instructions:

  1. Wash and slice the ripe tomatoes into thick rounds.
  2. Drain and slice the vegan mozzarella cheese into similar-sized rounds.
  3. Arrange the tomato and mozzarella slices on a serving plate, alternating between them.
  4. Place a fresh basil leaf on top of each tomato and mozzarella slice.
  5. Drizzle the balsamic glaze and some extra virgin olive oil over the salad.
  6. Season with salt and pepper to taste.
  7. Serve immediately and enjoy!
