Vegan Beijing-style Tofu
Ingredients:
- 1 block of firm tofu, cubed
- 2 tablespoons cornstarch
- 1/4 cup vegetable oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons hoisin sauce
- 1 tablespoon maple syrup
- 1 tablespoon sriracha
- 1/4 cup peanuts
- 2 green onions, sliced
Instructions:
- Press the tofu to remove excess moisture. Cut it into cubes and toss them in cornstarch.
- In a large pan, heat the vegetable oil over medium heat and add the tofu cubes. Cook until crispy and golden brown on all sides. Remove from the pan and set aside.
- In the same pan, add the sliced onion, bell peppers, garlic, and ginger. SautΓ© until the vegetables are tender.
- In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, maple syrup, and sriracha.
- Pour the sauce into the pan with the vegetables and stir well. Add the tofu back into the pan and toss to coat.
- Garnish with peanuts and green onions.
