Vegan BBQ Jackfruit Sandwich
Ingredients:
- 1 can jackfruit, drained and shredded
- 1/2 cup BBQ sauce
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 4 hamburger buns
- 1 cup coleslaw mix
- 1/4 cup vegan mayo
- 1 tablespoon apple cider vinegar
- 1 tablespoon maple syrup
- Optional toppings: pickles, sliced onions, lettuce
Instructions:
- In a skillet, heat olive oil over medium heat.
- Add shredded jackfruit, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 5 minutes, until jackfruit is heated through and slightly charred.
- Pour BBQ sauce over the jackfruit and stir to coat. Cook for another 5 minutes, until jackfruit is well coated and sauce is thickened.
- In a small bowl, combine coleslaw mix, vegan mayo, apple cider vinegar, and maple syrup. Stir until well combined.
- Toast the hamburger buns until golden brown.
- Assemble the sandwiches by placing a generous amount of BBQ jackfruit on the bottom bun. Top with coleslaw and any additional toppings.
- Serve the vegan BBQ jackfruit sandwiches warm and enjoy!
