Ingredients:

  • 1 can jackfruit, drained and shredded
  • 1/2 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1 cup coleslaw mix
  • 1/4 cup vegan mayo
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • Optional toppings: pickles, sliced onions, lettuce

Instructions:

  1. In a skillet, heat olive oil over medium heat.
  2. Add shredded jackfruit, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for 5 minutes, until jackfruit is heated through and slightly charred.
  3. Pour BBQ sauce over the jackfruit and stir to coat. Cook for another 5 minutes, until jackfruit is well coated and sauce is thickened.
  4. In a small bowl, combine coleslaw mix, vegan mayo, apple cider vinegar, and maple syrup. Stir until well combined.
  5. Toast the hamburger buns until golden brown.
  6. Assemble the sandwiches by placing a generous amount of BBQ jackfruit on the bottom bun. Top with coleslaw and any additional toppings.
