Vegan Banana Pancakes
Ingredients:
- 1 ripe banana, mashed
- 1 cup plant-based milk (such as almond or oat milk)
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- Pinch of salt
- Vegetable oil or vegan butter for cooking
Instructions:
- In a mixing bowl, whisk together mashed banana, plant-based milk, maple syrup, and vanilla extract.
- Add the all-purpose flour, baking powder, and salt. Mix until well combined.
- Heat a non-stick pan or griddle over medium heat and lightly grease with vegetable oil or vegan butter.
- Pour about 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm, topped with sliced bananas, maple syrup, and a sprinkle of cinnamon.
