Vegan Banana Bread
- Preheat your oven to 350Β°F (175Β°C).
- In a large mixing bowl, mash 4 ripe bananas with a fork.
- Add 1/2 cup of melted coconut oil, 1/2 cup of maple syrup, and 1 teaspoon of vanilla extract. Mix well.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
- Add the dry ingredients to the wet ingredients and gently mix until just combined. Be careful not to overmix.
- Optional: Fold in 1/2 cup of chopped walnuts or chocolate chips for extra flavor.
- Pour the batter into a greased loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
