Tuscan Sun-Dried Tomato Linguine

Ingredients:

  • 1 package of linguine pasta
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 3 cloves of garlic, minced
  • 2 cups of fresh spinach
  • 1/4 cup of olive oil
  • 1 teaspoon of dried Italian herbs
  • 1/4 teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the linguine according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
