Tuscan Sun-Dried Tomato Linguine
Let the flavors of Tuscany dance on your palate with this simple yet delicious linguine tossed in a vibrant sun-dried tomato sauce. This dish brings a piece of Italian sunshine right to your table!
Ingredients:
- 1 package of linguine pasta
- 1/2 cup sun-dried tomatoes in oil, chopped
- 3 cloves of garlic, minced
- 2 cups of fresh spinach
- 1/4 cup of olive oil
- 1 teaspoon of dried Italian herbs
- 1/4 teaspoon of red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Cook the linguine according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Add the sun-dried tomatoes, Italian herbs, and red pepper flakes if using. Cook for another 2 minutes.
- Stir in the fresh spinach and let it wilt for a couple of minutes.
- Add the cooked linguine to the pan, tossing well to coat with the tomato mixture. If the pasta seems dry, add a bit of the reserved pasta water until it reaches the desired consistency.
- Season with salt and pepper to taste.
- Transfer the linguine to serving plates and garnish with fresh basil leaves.
