Tofu Tikka Masala
Spice up your life with this vegan twist on a classic Indian dish! 🌢️🌱
  1. Ingredients:
    • 14 oz (400g) firm tofu, drained and cubed
    • 1 cup tomato puree
    • 1 large onion, finely chopped
    • 3 cloves garlic, minced
    • 1-inch piece of ginger, grated
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon paprika
    • 1/4 teaspoon cinnamon
    • 1/4 teaspoon cayenne pepper (adjust to taste)
    • 1 cup coconut milk
    • 2 tablespoons olive oil
    • Salt, to taste
    • Fresh cilantro, for garnish
  2. Instructions:
    1. In a bowl, combine the tomato puree, finely chopped onion, minced garlic, grated ginger, ground cumin, ground coriander, turmeric powder, paprika, cinnamon, cayenne pepper, and salt. Mix well to make a marinade.
    2. Add the tofu cubes to the marinade and gently toss to coat. Let it marinate for at least 30 minutes.
    3. Heat the olive oil in a large pan over medium heat. Add the marinated tofu cubes and cook until they are lightly browned on all sides.
    4. Reduce the heat to low and add the coconut milk. Stir well to combine all the flavors.
    5. Simmer for 10-15 minutes, until the sauce thickens slightly.
    6. Serve the Tofu Tikka Masala with steamed basmati rice and garnish with fresh cilantro.
