Tofu Tikka Masala
- Ingredients:
- 14 oz (400g) firm tofu, drained and cubed
- 1 cup tomato puree
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 cup coconut milk
- 2 tablespoons olive oil
- Salt, to taste
- Fresh cilantro, for garnish
- Instructions:
- In a bowl, combine the tomato puree, finely chopped onion, minced garlic, grated ginger, ground cumin, ground coriander, turmeric powder, paprika, cinnamon, cayenne pepper, and salt. Mix well to make a marinade.
- Add the tofu cubes to the marinade and gently toss to coat. Let it marinate for at least 30 minutes.
- Heat the olive oil in a large pan over medium heat. Add the marinated tofu cubes and cook until they are lightly browned on all sides.
- Reduce the heat to low and add the coconut milk. Stir well to combine all the flavors.
- Simmer for 10-15 minutes, until the sauce thickens slightly.
- Serve the Tofu Tikka Masala with steamed basmati rice and garnish with fresh cilantro.
