Ingredients:

  • 1 cup quinoa
  • 1 avocado, sliced
  • 1 cup diced tofu
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups mixed roasted veggies (such as bell peppers, zucchini, and sweet potatoes)
  • 2 cups fresh greens (such as spinach or kale)
  • Salt and pepper to taste

Instructions:

  1. Cook the quinoa according to the package instructions.
  2. In a skillet, heat the olive oil over medium heat. Add the tofu and cook until golden brown.
  3. Add the turmeric, paprika, garlic powder, and onion powder to the skillet with the tofu. Mix well to coat the tofu in the spices. Cook for another 2-3 minutes.
  4. In a separate pan, roast the mixed veggies until tender.
  5. In a bowl, assemble the breakfast bowl by layering the cooked quinoa, tofu scramble, roasted veggies, avocado slices, and fresh greens.
