The Ultimate Vegan Breakfast Bowl
Ingredients:
- 1 cup quinoa
- 1 avocado, sliced
- 1 cup diced tofu
- 1 tablespoon olive oil
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups mixed roasted veggies (such as bell peppers, zucchini, and sweet potatoes)
- 2 cups fresh greens (such as spinach or kale)
- Salt and pepper to taste
Instructions:
- Cook the quinoa according to the package instructions.
- In a skillet, heat the olive oil over medium heat. Add the tofu and cook until golden brown.
- Add the turmeric, paprika, garlic powder, and onion powder to the skillet with the tofu. Mix well to coat the tofu in the spices. Cook for another 2-3 minutes.
- In a separate pan, roast the mixed veggies until tender.
- In a bowl, assemble the breakfast bowl by layering the cooked quinoa, tofu scramble, roasted veggies, avocado slices, and fresh greens.
- Season with salt and pepper to taste. Enjoy!
