Thai Red Curry
Ingredients:
- 1 tablespoon red curry paste
- 1 can coconut milk
- 1 cup mixed vegetables (such as bell peppers, carrots, and broccoli)
- 1 cup tofu, cubed
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Fresh basil leaves, for garnish
Instructions:
- In a large pan, heat some oil over medium heat. Add the red curry paste and cook for a minute until fragrant.
- Next, pour in the coconut milk and stir until well combined with the paste. Bring the mixture to a simmer.
- Add the mixed vegetables and tofu. Cook for about 5-7 minutes until the vegetables are tender and the tofu is heated through.
- Stir in the soy sauce and brown sugar. Taste and adjust the seasoning if needed.
- Remove from heat and serve the Thai Red Curry hot, garnished with fresh basil leaves.
