Ingredients:

  • 1 tablespoon red curry paste
  • 1 can coconut milk
  • 1 cup mixed vegetables (such as bell peppers, carrots, and broccoli)
  • 1 cup tofu, cubed
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Fresh basil leaves, for garnish

Instructions:

  1. In a large pan, heat some oil over medium heat. Add the red curry paste and cook for a minute until fragrant.
  2. Next, pour in the coconut milk and stir until well combined with the paste. Bring the mixture to a simmer.
  3. Add the mixed vegetables and tofu. Cook for about 5-7 minutes until the vegetables are tender and the tofu is heated through.
  4. Stir in the soy sauce and brown sugar. Taste and adjust the seasoning if needed.
  5. Remove from heat and serve the Thai Red Curry hot, garnished with fresh basil leaves.
