Thai Pineapple Fried Rice

This Thai Pineapple Fried Rice is a delicious and colorful dish that brings together the flavors of Thailand and the sweetness of pineapple. It's a perfect combination of sweet, savory, and spicy.

Ingredients:

  • 2 cups cooked jasmine rice
  • 1 cup diced pineapple
  • 1 cup mixed vegetables (such as bell peppers, carrots, and peas)
  • 1/2 cup diced tofu
  • 1/4 cup cashews
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon Thai curry paste
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped green onions

Instructions:

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the Thai curry paste and cook for 1-2 minutes until fragrant.
  3. Add the diced tofu and cook for another 2-3 minutes until lightly browned.
  4. Add the mixed vegetables and cook for 3-4 minutes until slightly softened.
  5. Add the cooked jasmine rice, diced pineapple, cashews, and soy sauce. Stir well to combine all the ingredients.
  6. Cook for another 3-4 minutes, stirring occasionally, until everything is heated through.
  7. Remove from heat and garnish with chopped fresh cilantro and green onions.
