Ingredients:
- 2 cups cooked jasmine rice
- 1 cup diced pineapple
- 1 cup mixed vegetables (such as bell peppers, carrots, and peas)
- 1/2 cup diced tofu
- 1/4 cup cashews
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon Thai curry paste
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped green onions
Instructions:
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the Thai curry paste and cook for 1-2 minutes until fragrant.
- Add the diced tofu and cook for another 2-3 minutes until lightly browned.
- Add the mixed vegetables and cook for 3-4 minutes until slightly softened.
