Thai Mango Sticky Rice
Ingredients:
- 1 cup sticky rice
- 2 ripe mangoes, sliced
- 1 cup coconut milk
- 1/2 cup sugar
- 1/2 teaspoon salt
Instructions:
- Wash the sticky rice and soak it in water for at least 2 hours.
- Drain the water and transfer the rice to a steamer lined with cheesecloth.
- Steam the rice for about 20-25 minutes, or until it becomes soft and translucent.
- In the meantime, in a small saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar dissolves.
- Once the rice is cooked, remove it from the steamer and transfer it to a bowl.
- Pour half of the coconut milk mixture over the rice and stir gently to coat the rice.
- Cover the bowl with a clean kitchen towel and let it rest for about 15 minutes to allow the rice to absorb the coconut milk.
- Divide the sticky rice into serving bowls and top with slices of fresh ripe mango.
- Drizzle the remaining coconut milk mixture over the mango and rice.
- Serve warm or chilled.
