Thai Mango Sticky Rice
Sweet and sticky, this Thai dessert is a tropical delight with a touch of coconut! πŸ₯­πŸ₯₯

Ingredients:

  • 1 cup sticky rice
  • 2 ripe mangoes, sliced
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt

Instructions:

  1. Wash the sticky rice and soak it in water for at least 2 hours.
  2. Drain the water and transfer the rice to a steamer lined with cheesecloth.
  3. Steam the rice for about 20-25 minutes, or until it becomes soft and translucent.
  4. In the meantime, in a small saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar dissolves.
  5. Once the rice is cooked, remove it from the steamer and transfer it to a bowl.
  6. Pour half of the coconut milk mixture over the rice and stir gently to coat the rice.
  7. Cover the bowl with a clean kitchen towel and let it rest for about 15 minutes to allow the rice to absorb the coconut milk.
  8. Divide the sticky rice into serving bowls and top with slices of fresh ripe mango.
  9. Drizzle the remaining coconut milk mixture over the mango and rice.
  10. Serve warm or chilled.
