Start your day with these vibrant and nourishing tofu scramble tacos. Theyโ€™re easy to make, loaded with flavor, and perfect for a quick breakfast or brunch!

  • 1 block firm tofu, drained and crumbled
  • 4 corn tortillas
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 2 tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp black salt (kala namak) or regular salt
  • Black pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish (optional)
  • Hot sauce or salsa for serving (optional)

Instructions:

  1. Heat olive oil in a non-stick frying pan over medium heat.
  2. Add the crumbled tofu to the pan. Stir in turmeric, paprika, nutritional yeast, black salt, and black pepper.
  3. Cook for 5-7 minutes until the tofu is heated through and the spices are well incorporated. Stir occasionally to prevent sticking.
  4. While the tofu is cooking, warm the corn tortillas in a separate pan or in the microwave.
  5. Assemble the tacos by distributing the tofu scramble evenly among the tortillas.
  6. Top with fresh slices of avocado, cherry tomatoes, and spinach.
  7. Garnish with cilantro and drizzle with hot sauce or salsa, if desired.
