Sunrise Tofu Scramble Tacos

Start your day with these vibrant and nourishing tofu scramble tacos. Theyโre easy to make, loaded with flavor, and perfect for a quick breakfast or brunch!
- 1 block firm tofu, drained and crumbled
- 4 corn tortillas
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 2 tbsp nutritional yeast
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp black salt (kala namak) or regular salt
- Black pepper to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish (optional)
- Hot sauce or salsa for serving (optional)
Instructions:
- Heat olive oil in a non-stick frying pan over medium heat.
- Add the crumbled tofu to the pan. Stir in turmeric, paprika, nutritional yeast, black salt, and black pepper.
- Cook for 5-7 minutes until the tofu is heated through and the spices are well incorporated. Stir occasionally to prevent sticking.
- While the tofu is cooking, warm the corn tortillas in a separate pan or in the microwave.
- Assemble the tacos by distributing the tofu scramble evenly among the tortillas.
- Top with fresh slices of avocado, cherry tomatoes, and spinach.
- Garnish with cilantro and drizzle with hot sauce or salsa, if desired.
