Ingredients:

  • 1 cup dried lentils
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions:

  1. Rinse the lentils and set aside.
  2. Heat some oil in a large pot over medium heat. Add the diced onion and cook until translucent.
  3. Add the minced garlic and grated ginger. Cook for another minute.
  4. Stir in the curry powder, cumin, and turmeric. Cook for a minute to toast the spices.
  5. Add the lentils, diced tomatoes, vegetable broth, and coconut milk to the pot. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the lentils are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.
