Spicy Lentil Curry
Ingredients:
- 1 cup dried lentils
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions:
- Rinse the lentils and set aside.
- Heat some oil in a large pot over medium heat. Add the diced onion and cook until translucent.
- Add the minced garlic and grated ginger. Cook for another minute.
- Stir in the curry powder, cumin, and turmeric. Cook for a minute to toast the spices.
- Add the lentils, diced tomatoes, vegetable broth, and coconut milk to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
