- 2 cups young green jackfruit in brine, drained and shredded
- 1 small red onion, finely sliced
- 1 ripe avocado, sliced
- 1 cup red cabbage, shredded
- 1 cup vegan BBQ sauce
- 1 tsp liquid smoke
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp ground black pepper
- 1 tbsp olive oil
- 6 whole wheat slider buns
- Salt to taste
Instructions:
- Preheat your oven to 375Β°F (190Β°C).
- In a large bowl, mix the shredded jackfruit with the BBQ sauce, liquid smoke, garlic powder, paprika, and black pepper until well combined.
- On a baking sheet lined with parchment paper, spread the seasoned jackfruit in an even layer and bake for 20-25 minutes, until the edges are slightly crispy.
- While the jackfruit is baking, heat olive oil in a pan over medium heat and sautΓ© the sliced red onion until soft and translucent. Set aside.
- Take the jackfruit out of the oven and let it cool for a few minutes. If needed, use a fork to further shred it to resemble pulled pork texture.
- Lightly toast the slider buns in the oven or on a pan.
