Creamy avocado adds the final touch to this Mexican-inspired delight, all wrapped up in a cozy whole wheat tortilla.
Ingredients:
- 1 cup cooked black beans
- 1 cup cooked brown rice
- 1/2 cup sweet corn kernels
- 1 large tomato, diced
- 2 cups shredded lettuce
- 1 ripe avocado, sliced
- 4 whole wheat tortillas
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt and pepper to taste
- Your favorite salsa for topping
Instructions:
- In a bowl, combine cooked black beans with cumin, chili powder, salt, and pepper. Mix well and set aside.
