Mediterranean Stuffed Peppers
- Preheat the oven to 400°F (200°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix cooked couscous, drained chickpeas, diced cherry tomatoes, crumbled feta cheese, chopped fresh parsley, and dried oregano.
- Season with salt and pepper to taste. Stir to combine.
- Stuff the bell peppers with the couscous mixture and place them in a baking dish.
- Bake in the preheated oven for 25-30 minutes, until the peppers are tender.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with additional fresh parsley and enjoy!
