Mediterranean Lentil Stew
Ingredients:
- 1 cup dried lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, celery, and bell pepper. Cook until the vegetables are softened.
- Add the lentils, diced tomatoes, vegetable broth, thyme, oregano, paprika, salt, and pepper to the pot. Bring to a boil, then reduce the heat and simmer for about 30 minutes or until the lentils are tender.
- Taste and adjust the seasonings if needed. Serve hot and enjoy!
