- 1 cup almond milk (or any plant-based milk)
- 1/4 cup chickpea flour
- 1/4 cup pure maple syrup, plus more for glazing
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 6 slices of thick-cut, sturdy bread (like sourdough or Texas toast)
- Powdered sugar for dusting (optional)
- Sliced strawberries for serving (optional)
- Non-dairy butter or oil for cooking
- In a shallow dish, whisk together almond milk, chickpea flour, 1/4 cup maple syrup, vanilla extract, cinnamon, and nutmeg until smooth.
- Preheat a non-stick skillet over medium heat and add a little non-dairy butter or oil to coat the bottom.
- Dip each slice of bread into the batter, allowing it to soak for a few seconds on each side. Allow the excess to drip off before transferring to the skillet.
- Cook each slice for 2-3 minutes on each side, or until golden brown and slightly crispy.
- After cooking all the slices, stack the French toast on plates. Drizzle with additional maple syrup and a sprinkle of cinnamon.
- If desired, dust with powdered sugar and garnish with fresh sliced strawberries.
- Serve hot and enjoy your blissful vegan breakfast!
