- Ingredients:
- 4 whole wheat tortillas
- 8 oz tempeh, steamed and cut into strips
- 1 ripe mango, peeled and chopped
- 1 small red bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 2 cups fresh arugula or spinach leaves
- 1/4 cup fresh cilantro, chopped
- 1/4 cup vegan mayo
- 2 tbsp apple cider vinegar
- 1 tbsp agave syrup
- 1 tsp grated fresh ginger
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- Salt and pepper to taste
- Instructions:
- In a small bowl, mix together the vegan mayo, apple cider vinegar, agave syrup, fresh ginger, ground cumin, ground coriander, salt, and pepper to create the mango chutney dressing.
- Add the chopped mango to the dressing and mix until the mango is well coated. Set aside to marinate.
- Take a tortilla and spread a layer of the mango chutney dressing in the center. Place a handful of arugula or spinach leaves on top.
- Add tempeh strips, red bell pepper, and red onion.
- Sprinkle with fresh cilantro.
- Fold the bottom of the tortilla up over the filling, then fold in the sides and roll up tightly. Secure with toothpicks if needed.
- Repeat with the remaining tortillas and filling.
- Serve immediately or wrap in foil to keep fresh if you're on the go!
