  • Ingredients:
    • 4 whole wheat tortillas
    • 8 oz tempeh, steamed and cut into strips
    • 1 ripe mango, peeled and chopped
    • 1 small red bell pepper, thinly sliced
    • 1 small red onion, thinly sliced
    • 2 cups fresh arugula or spinach leaves
    • 1/4 cup fresh cilantro, chopped
    • 1/4 cup vegan mayo
    • 2 tbsp apple cider vinegar
    • 1 tbsp agave syrup
    • 1 tsp grated fresh ginger
    • 1/4 tsp ground cumin
    • 1/4 tsp ground coriander
    • Salt and pepper to taste
  • Instructions:
    • In a small bowl, mix together the vegan mayo, apple cider vinegar, agave syrup, fresh ginger, ground cumin, ground coriander, salt, and pepper to create the mango chutney dressing.
    • Add the chopped mango to the dressing and mix until the mango is well coated. Set aside to marinate.
    • Take a tortilla and spread a layer of the mango chutney dressing in the center. Place a handful of arugula or spinach leaves on top.
    • Add tempeh strips, red bell pepper, and red onion.
    • Sprinkle with fresh cilantro.
    • Fold the bottom of the tortilla up over the filling, then fold in the sides and roll up tightly. Secure with toothpicks if needed.
    • Repeat with the remaining tortillas and filling.
    • Serve immediately or wrap in foil to keep fresh if you're on the go!
