Crispy Sesame Ginger Tofu

  • Ingredients:
  • 1 block of extra-firm tofu, pressed and cubed
  • 1/4 cup cornstarch
  • 1/4 cup vegetable oil, for frying
  • 1 bell pepper, sliced
  • 1 cup broccolini, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon freshly grated ginger
  • 2 garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced for garnish
  • Instructions:
  • Dredge the cubed tofu in cornstarch until all sides are coated.
  • Heat the vegetable oil in a pan over medium-high heat and fry the tofu until golden brown and crispy. Set aside on a paper towel-lined plate.
  • In the same pan, sautΓ© the bell pepper and broccolini until tender-crisp.
  • In a bowl, whisk together the soy sauce, maple syrup, ginger, garlic, rice vinegar, and sesame oil to create the sauce.
  • Pour the sauce into the pan with the vegetables and bring to a simmer.
  • Add the crispy tofu back into the pan and toss to coat evenly with the sauce.
  • Let everything simmer together for a few more minutes and then remove from heat.
  • Top with toasted sesame seeds and garnish with green onions.
