Crispy Sesame Ginger Tofu

- Ingredients:
- 1 block of extra-firm tofu, pressed and cubed
- 1/4 cup cornstarch
- 1/4 cup vegetable oil, for frying
- 1 bell pepper, sliced
- 1 cup broccolini, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon freshly grated ginger
- 2 garlic cloves, minced
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon toasted sesame seeds
- 2 green onions, sliced for garnish
- Instructions:
- Dredge the cubed tofu in cornstarch until all sides are coated.
- Heat the vegetable oil in a pan over medium-high heat and fry the tofu until golden brown and crispy. Set aside on a paper towel-lined plate.
- In the same pan, sautΓ© the bell pepper and broccolini until tender-crisp.
- In a bowl, whisk together the soy sauce, maple syrup, ginger, garlic, rice vinegar, and sesame oil to create the sauce.
- Pour the sauce into the pan with the vegetables and bring to a simmer.
- Add the crispy tofu back into the pan and toss to coat evenly with the sauce.
- Let everything simmer together for a few more minutes and then remove from heat.
- Top with toasted sesame seeds and garnish with green onions.
- Serve immediately with a side of fluffy jasmine rice or your favorite grain.
