Cranberry Orange Bread
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup fresh cranberries
- Zest of 2 oranges
- ¾ cup freshly squeezed orange juice
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 tablespoon flaxseed meal + 3 tablespoons water (flaxseed egg substitute)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the flaxseed meal and water. Set aside for 5 minutes to thicken, then add the orange juice, oil, and vanilla extract. Whisk together until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Fold in the cranberries and orange zest.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the bread cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
