Cranberry Orange Bread
Taste the holiday season with this delightful cranberry orange bread 🍊🎄

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup fresh cranberries
  • Zest of 2 oranges
  • ¾ cup freshly squeezed orange juice
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon flaxseed meal + 3 tablespoons water (flaxseed egg substitute)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and set aside.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the flaxseed meal and water. Set aside for 5 minutes to thicken, then add the orange juice, oil, and vanilla extract. Whisk together until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Fold in the cranberries and orange zest.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the bread cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
