Chickpea Curry
Ingredients:
- 2 cups cooked chickpeas
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 2 tablespoons curry powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon paprika powder
- 1/2 teaspoon chili powder (adjust to taste)
- 1 cup coconut milk
- Salt to taste
- Chopped cilantro for garnish
- Cooked basmati rice
Instructions:
- In a large pot or pan, heat some oil over medium heat.
- Add the diced onion and sautΓ© until translucent.
- Add the minced garlic and diced bell pepper, and cook for another 2-3 minutes.
- Add the diced tomato and cook until softened.
- Stir in the curry powder, cumin powder, turmeric powder, paprika powder, and chili powder.
- Add the cooked chickpeas and coconut milk, and season with salt to taste.
- Simmer for about 10-15 minutes, or until the flavors combine and the curry thickens slightly.
- Serve the chickpea curry over a bed of basmati rice and garnish with chopped cilantro.
