Chickpea Curry
A hearty and flavorful chickpea curry that will warm you up! πŸŒΆοΈπŸ›

Ingredients:

  • 2 cups cooked chickpeas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 2 tablespoons curry powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 cup coconut milk
  • Salt to taste
  • Chopped cilantro for garnish
  • Cooked basmati rice

Instructions:

  1. In a large pot or pan, heat some oil over medium heat.
  2. Add the diced onion and sautΓ© until translucent.
  3. Add the minced garlic and diced bell pepper, and cook for another 2-3 minutes.
  4. Add the diced tomato and cook until softened.
  5. Stir in the curry powder, cumin powder, turmeric powder, paprika powder, and chili powder.
  6. Add the cooked chickpeas and coconut milk, and season with salt to taste.
  7. Simmer for about 10-15 minutes, or until the flavors combine and the curry thickens slightly.
  8. Serve the chickpea curry over a bed of basmati rice and garnish with chopped cilantro.
