Ingredients:
- 1 pack of tempeh, cut into strips
- 1 tablespoon soy sauce
- 2 teaspoons maple syrup
- 1 teaspoon chili flakes
- Β½ teaspoon ground cumin
- Β½ teaspoon smoked paprika
- 2 cloves garlic, minced
- 1 small piece of ginger, grated
- 1 tablespoon lime juice
- 1 head of butter lettuce, leaves separated
- 1 carrot, julienned
- 1 small cucumber, julienned
- 1 red bell pepper, thinly sliced
- Fresh cilantro leaves
- Chopped peanuts, for garnish
- Spicy Thai dipping sauce or sweet chili sauce, to serve
Instructions:
- In a bowl, whisk together soy sauce, maple syrup, chili flakes, cumin, smoked paprika, garlic, ginger, and lime juice to create the marinade.
- Add the tempeh strips to the marinade and let sit for at least 30 minutes to soak up all the flavors.
- Heat a skillet over medium heat and add the marinated tempeh, cook until the strips are golden brown on all sides.
- While the tempeh cooks, prepare the veggies and set aside.
