- 2 large pitas, cut into half to make pockets
- 2 ripe avocados, sliced
- 1 cup cherry tomatoes, halved
- 1 small cucumber, sliced
- 1/2 red onion, thinly sliced
- 1 cup dairy-free plain yogurt
- 1 clove garlic, minced
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Olive oil for drizzling
- 1/2 teaspoon dried oregano
To make the dairy-free tzatziki:
Combine dairy-free yogurt, minced garlic, chopped dill, lemon juice, salt, and pepper in a bowl. Mix well and chill in the refrigerator while you prepare the rest of the ingredients.
To assemble the gyros:
