Apple Cinnamon Pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup almond milk
- 1 tablespoon apple cider vinegar
- 1 tablespoon melted vegan butter
- 1 teaspoon vanilla extract
- 1 apple, peeled, cored, and finely chopped
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, mix together the almond milk and apple cider vinegar. Let it sit for 5 minutes to curdle.
- Add the melted vegan butter and vanilla extract to the almond milk mixture.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chopped apple.
- Heat a non-stick skillet over medium heat and lightly grease with vegan butter or cooking spray.
- Scoop 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with the remaining batter.
- Serve the pancakes warm with a drizzle of maple syrup and extra apple slices on top.
