Apple Cinnamon Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon melted vegan butter
  • 1 teaspoon vanilla extract
  • 1 apple, peeled, cored, and finely chopped

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In a separate bowl, mix together the almond milk and apple cider vinegar. Let it sit for 5 minutes to curdle.
  3. Add the melted vegan butter and vanilla extract to the almond milk mixture.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the chopped apple.
  6. Heat a non-stick skillet over medium heat and lightly grease with vegan butter or cooking spray.
  7. Scoop 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  8. Repeat with the remaining batter.
  9. Serve the pancakes warm with a drizzle of maple syrup and extra apple slices on top.
